There’s a new executive chef at Glasshouse Bistro & CafĂ©. Nathan Hansen, the restaurant’s former sous chef, was promoted when former executive chef Enrique Toledo left in December.
As chef of the moment, Hansen continues the restaurant’s philosophy of serving Canadian cuisine with locally sourced products and ingredients.
“Because it’s Canada’s 150th, we are trying very hard to support local business,” said Hansen.
“Everything on the lunch and dinner menu has been revamped except breakfast,” he added. One particular specialty, chicken in maple brine and covered with a brown sugar maple glaze, is a salute to Canada’s anniversary.
Hansen has also expanded the Thursday Tapas menu and prepares something different every week on Friday Fresh nights.
